Chef's knife 20 cm from KAI in the SCHUN CLASSIC series is a chef's knife that is ideal for many different tasks in the kitchen such as slicing, cutting and chopping everything from vegetables to meat. The longer blade provides better leverage and is especially handy for larger foods. It also enables cutting more with fewer strokes, which is important for productivity in commercial kitchens. Despite its size, Shun Classic's thin blades are lighter and less strenuous to use than comparable European chef's knives. The knife has a core of the quality steel VG-MAX and 32 layers of Damascus steel on each side of the core, which gives a beautiful pattern. The handle is made of laminated Pakka wood, sanded and polished to a glossy finish. Each Shun knife has a unique damask pattern that highlights its individual character. The technique for making these knives is inspired by samurai swords.
