Chinese hoe 18 cm with high blade from KAI in the SHUN CLASSIC series, designed for chopping vegetables. The Chinese chopping knife is a large square knife with a very wide blade. Each part of the blade can be used: the edge for chopping vegetables, especially large ones like cabbage, and the flat part for crushing cloves of garlic or ginger. It is flexible enough to chop and slice almost any type of food but should not be used on joints and meat - that is the job of the meat axe. The knife has a core of the quality steel VG-MAX and 32 layers of Damascus steel on each side of the blade. The handle is made of laminated Pakka wood. A good knife for both ambitious home cooks and professional kitchens.
