A trancher knife from Yaxell that resembles a chef's knife with a longer and narrower blade. This shape makes it easier when cutting meat into thin slices. The knife is excellent for both raw and cooked meat, as well as for sushi and sashimi. Yaxell Super Gou is an exclusive knife series. The blades consist of 161 layers of damascus steel with a core of Japanese powder steel SG2. This steel has a high carbon content and is very hard, which allows the edge to be ground extremely sharp. The powder steel is surrounded by 80 layers of rust-resistant steel on each side of the edge. The red-black handle is made of micarta, a material produced by combining linen cloth and special plastic under high pressure. This provides a hard, water-resistant and hygienic material, perfect for kitchen environments. The handle is attached with three strong steel rivets and has a stainless button at the end to ensure perfect balance.
