Satake Ame - Chinese chef's knife or hoe is a versatile knife with a smooth high profile that makes it ideal for many kitchen tasks. Many chefs use their Chinese chef's knife for almost everything in cooking, from vegetables and root vegetables to fish, poultry and meat. The knife has a beautiful handle of Vril from larch, peach tree, camphor and maple, where each handle is unique (see picture). The blade is 17 cm long, hand-hammered from 5 layers of AUS10 steel with a hardness of 60-61 HRC, and both bolster and end piece are stainless steel.
