The Kiritsuke knife is a cross between a vegetable and fish knife and is perfect for filleting fish, cutting meat and chopping vegetables. The knife blade is medium height, 24 cm long and has a sharp, triangular tip.
The knife is made with high-tech technology, MC63 steel (refined SG2 steel) has been micro-carbide powdered and CRYODUR® ice-hardened to an impressive 63 HCR. The result is exceptional hardness and durability. The blade has 100 layers of stainless steel that has been ground according to the traditional three-step Honbazuke method, where each step increases the sharpness and also produces a beautiful floral damask pattern that is unique to each knife.
