Satake Ame – Santoku is a Japanese chef's knife, and the most common model in Asian kitchens. The blade has a smooth profile up to about three-quarters, where a sharp curve descends towards the tip. The handle is made of Vril from larch, peach tree, camphor and maple, which makes each handle unique (see picture). Santoku is also very popular in Western kitchens and is suitable for all kinds of cooking. The blade is 18 cm long, hand-hammered from 5 layers of AUS10 steel with a hardness of 60-61 HRC, and both bolster and end piece are stainless steel.
