Zen Kiritsuke 20 cm from Yaxell is a Japanese knife model that combines the characteristics of a vegetable knife and a fish knife. Traditionally, it is used by kitchen managers as a symbol of status, as it is more difficult to handle than other knives. Yaxell Zen is an award-winning knife series, where the series' chef's knife has won Aftonbladet's big knife test three years in a row. The blades consist of 37 layers of steel with a core of hard VG10 steel and outer layers of softer steel. This construction gives the knives a sharp edge, extreme strength and rust resistance.
