Het verhaal begon met La Colombe d'Or, een boek dat in 1994 uitkwam en Martine's redactionele visie combineerde met Prosper's fotografische expertise. Assouline heeft sindsdien verschillende prominente collecties gelanceerd, waaronder The Memoir Collection, die zich richt op kunst, mode en architectuur, en The Impossible Collection, waarvan de handgebonden edities symbolen zijn geworden van moderne boekkunst.
Assouline heeft een reeks flagship stores in wereldsteden zoals Parijs, New York, Londen en Istanbul. De winkels presenteren zowel het volledige assortiment boeken als unieke vintage objecten in een omgeving die doet denken aan een curiosakast. In 2019 ging Assouline een partnerschap aan met One Tree Planted en heeft sindsdien meer dan 200.000 bomen geplant, wat de toewijding van het bedrijf aan duurzaamheid weerspiegelt. Met elk verkocht boek draagt Assouline bij aan wereldwijde herbebossingsprojecten, van Australië tot het Amazonegebied.
