Santoku from Yaxell in the Super Gou series is a Japanese knife model that resembles a classic chef's knife but has a shorter blade and rounded tip. The name means "three tasks" and the knife is perfect for slicing, dicing and chopping. It comes with a maple wood knife guard. Yaxell Super Gou Ypsilon is an exclusive knife series with 193 layers of steel. The core consists of Japanese powder steel SG2, known for its high carbon content and hardness that provides a razor-sharp edge. The blade has 192 layers of rust-resistant steel in a beautiful damask pattern. The degree of hardness is 63 HRC. The black micarta handle has antibacterial properties and is decorated with a chrysanthemum.
