Santoku knife 18 cm from KAI in the SHUN CLASSIC series is a universal knife sharpened on both sides. It works well for everything you need to cut in the kitchen, from fruit and vegetables to meat, fish and poultry. The knife has a VG-MAX steel core and 32 layers of Damascus steel on each side of the core, which gives a beautiful pattern on the blade. The handle is made of laminated Pakka wood, sanded and polished to a glossy finish. Each Shun knife has a unique damask pattern that highlights its individual character. The technique used to make these knives is inspired by samurai swords, allowing for both Japanese and Western knife shapes.
