Sashimi knife 24 cm Yanagiba from the Kai brand in the Wasabi series is the ideal knife for slicing. Yanagiba means "arrow blade" and has a long, narrow blade with a traditional Japanese edge that is ground on one side and a slightly curved knife edge. It is designed to be pulled through the food reducing the loss of natural juices and creating clean cuts. Yanagiba is most often used to prepare sashimi and is excellent for cutting meat and other moist foods. The handle combines bamboo powder and polypropylene for optimal hygiene thanks to bamboo's natural antibacterial properties. The blade is made of high-carbon stainless steel 1K6.
