Long Japanese slicing knife 24 cm in the SHUN PREMIER series from the KAI brand, ideal for cutting thin slices of meat. The knife has a core of VG-MAX steel and 32 layers of Damascus steel which, together with the hammered surface, gives a beautiful pattern. The handle is made of laminated Pakka wood of brown walnut. The knife helps retain the meat juices and flavor in the meat instead of it pooling on the cutting board and slices can be cut with one long stroke. The narrow profile and razor-sharp edge allow the blade to slide through the meat with less friction.
