Satake Ame – Knife 3-piece set includes Petty, Santoku and Kiritsuke knives. The Petty knife is a paring knife with a Japanese design, perfect for detail work. Santoku is a versatile Japanese knife model that is used for many different tasks and is especially good for vegetables, fish, poultry and meat. The Kiritsuke knife has a long blade that allows for long, even cuts to create fine slices of raw fish and other ingredients. All three knife models have handles made of Vril from larch, peach tree, camphor and maple, which makes each handle unique (see picture). Blade lengths are 12cm for Petty, 18cm for Santoku and 23cm for Kiritsuke. The blades are hand-hammered from 5 layers of AUS10 steel with a hardness of 60-61 HRC, and both bolster and end piece are stainless steel.
