Black 5000MCD 67 Sujihiki - 24 cm is a filet knife from the Japanese brand Miyabi. The knife has a blade length of 24 cm with a razor-sharp edge that is perfect for filleting and deboning fish or trimming and cutting thin slices of meat. The thin knife blade handles the raw materials with great care.
The knife is made with high-tech technology, MC66 steel has been micro-carbide powdered and CRYODUR® ice-hardened to an impressive 66 HCR. The result is exceptional hardness and durability. The blade has 132 layers of stainless steel that has been ground according to the traditional three-step Honbazuke method, where each step increases the sharpness and also produces a beautiful floral damask pattern that is unique to each knife.
