Also called a bird's beak knife, this knife is the classic tool for making decorative cuts, such as radish rosettes or fluted mushrooms. It is also excellent for cutting away blemishes, peeling and slicing soft fruits such as nectarines or plums. Thanks to the curved shape, you can cut close to the skin and keep more of the fruit or vegetable you are peeling. The knife has a core of the quality steel VG-MAX and 32 layers of Damascus steel. The handle is made of laminated Pakka wood, sanded and polished to a glossy finish.
