This MAC filleting knife offers a flexibility that makes filleting fish a pleasure. With a sharpening angle of 10-15 degrees, the knife is razor sharp. The blade consists of an alloy of extra hard steel, including molybdenum, tungsten and vanadium, which makes the edge both rust-free and very durable.
